Why Water Temperature Is the Whole Recipe in Tea

Coffee drinkers can use boiling water for nearly everything. Tea drinkers cannot — and the reason is a pair of compounds pulling in opposite directions as the water heats.

The two forces

Tea leaf carries amino acids (sweet, savory — the umami of gyokuro) and catechins (bitter, astringent — the tannin bite). They extract at different rates: amino acids dissolve readily in cool water; catechins need heat to move. At 60°C you brew sweetness and skip the bite. At 100°C you extract everything — including the bitter compounds that make over-steeped green tea notorious.

Why black tea wants the heat

Oxidation changes the equation: black tea's catechins converted into theaflavins and thearubigins during processing — different molecules, warmer flavors, and heat-tolerant. Boiling water opens the full body of an Assam; the same heat on sencha just bulldozes its sweetness.

The kettle workaround

Without a temperature kettle: boil, rest uncovered 2 minutes (≈85°C), 5 minutes (≈75°C), 7 minutes (≈70°C). Crude but effective — and a $15 gooseneck with temperature control ends the guessing permanently. Then run the table: brew your usual tea 5°C cooler and hotter, taste both against your default, and you will never distrust the column again.
