Chamomile wants full boil and a decently long steep — the flowers' sweetness is oil-bound and stingy. Whole flowers beat crushed "tea bags dust" visibly; Egyptian grades run apple-sweet, Croatian slightly earthier. Longer steeps deepen the honey note without bitterness — there is no tannin here to fear. A spoon of honey sounds redundant and tastes right.
