About Brewing Dan Cong (Phoenix)

Dan Cong's party trick is honest: single bushes genuinely produce aroma compounds that read as peach, almond, or orchid — no flavoring involved. The styles are named for the scent (Mi Lan Xiang = honey orchid is the entry classic). Long, twisty leaves and near-boiling water in gongfu doses; steep times run short or the tannins take over. The resteep count is the deepest on this page.

Western Mug vs Gaiwan Sessions

The numbers above optimize for a standard Western mug (8–12 oz). If brewing Gongfu style in a gaiwan, double the leaf dose (5–7 g per 100 ml), use boiling or near-boiling water, and reduce steep times to 15–30 seconds for 6–8 distinct infusions. Read the full Gongfu breakdown →
